2 cups plain flour
1 teaspoon baking soda
½ teaspoon salt
4 tablespoons butter, room temperature
½ cup brown sugar
¼ cup granulated sugar
1 teaspoon vanilla extract
3 ripe bananas, mashed
pistachio nuts, roughly chopped
Preheat oven 175ºC
Line a baking tray with baking paper
Mix together the butter, sugar & vanilla
Add sifted flour, baking soda & salt
Add the eggs and combine
Mix in the bananas
Place a tablespoon of the mixture on the tray for each cookie
Bake for 10 mins or until edges brown
Cool on a wire rack for 10 mins
Dunk each cookie into the melted chocolate just before the chocolate hardens
sprinkle with nuts, or topping or your choice.
Top with a cherry.
Assemble as a Sundae with sliced banana and ice cream.
