Ingredients
400 gm chicken mince
lemongrass or spring onion or skewers
1/3 cup cup fresh grated coconut
2 kaffir lime leaves, finely sliced
2 shallots
2 garlic cloves
1 tbsp ginger
1 cup coriander, chopped
2 red chillies
2 birds eye chillies
30gr fresh turmeric, grated
½ tsp shrimp paste (optional)
2 tbsp shaved coconut sugar, substitute palm sugar or brown sugar
2 spring onions
salt and pepper to taste
brush with oil
Lime to serve
Method
Combine all ingredients until a smooth paste is formed.
Take a handful of mixture and wrap it around a stick of lemongrass, or a spring onion, or a skewer which has been soaked in water.
Cook over medium heat on the BBQ, until becomes fragrant or is almost golden brown.
Squeeze lime over it to serve.
