500g penne pasta
3 punnets baby Roma tomatoes
350g small Australian Prawn meat
200g Danish feta
3 garlic cloves
¼ cup extra virgin olive oil
2 tbsp oregano
1 tbsp chilli flakes
¼ bunch of mint, chopped finely
Salt & pepper
Preheat the oven to 220°C.
Place tomatoes, and garlic on a large, shallow baking tray. Place the feta in the centre of the tray. Drizzle with oil, then sprinkle with oregano, chilli and season. Bake for 10 minutes.
Add prawns to tomatoes and cook for a further 10 minutes or until prawns are cooked.
Cook pasta as per packet directions.
Remove tomatoes from the oven and with the back of a wooden spoon gently squash tomatoes and feta.
Strain pasta and keep ½ cup of pasta liquid. Mix with tomatoes. If needed add the pasta water.
Finally, add mint and seasoning to taste.
