1 cooked baked potato per person
1 ½ tsp. oil (olive or light oil)
1 med. onion
2 cloves garlic
200g turkey (option is chicken or pork mince)
1 cup cooked cannellini beans
1 red chilli, deseeded and chopped
1 tsp Cayenne Pepper to taste (optional)
1 tsp chilli sauce (optional)
½ cut tomato paste, salt reduced
1 bunch coriander
natural yogurt to serve
Heat oil and sauté onion, garlic and turkey. Stir until meat is brown. Add beans, chilli, chili powder,chilli sauce, tomato paste, half a bunch of coriander and cayenne to taste.
Open the baked potatoes and fill each with the meat mixture.
Serve with yoghurt and coriander on top.
