1 tbsp coconut oil, a little extra if the mixture is crumbly
1 cup smooth nut butter of choice
½ cup coconut sugar
½ cup chocolate whey protein powder
2 tbsps raw cacao powder
2 large eggs
1 pinch salt
¼ cup cacao nibs
Preheat the oven to 180°C. Grease a large baking tray with coconut oil.
In a large bowl mix all ingredients until a dough forms.
Spoon out 2 tbsps of dough for each cookie and place on a baking tray. Flatten cookie slightly with a fork to desired thickness.
Sprinkle each cookie with cacao nibs.
Bake for 10-12 minutes.
