Baked Beans on Spelt Toast


Navy beans, canned

1 cup chopped tomatoes

1 tbsp tomato paste

1 tbsp Dijon mustard

1 tbsp rapadura or brown sugar

sea salt to taste

2 pieces spelt sourdough, toasted

wild rocket dressed in lemon juice, olive oil and sea salt to sit on top



Put all the ingredients up to the boil in a pot and bring to a simmer.
