Bagel with Turmeric Scrambled Egg & Avocado

Time 10 minutes


2 bagels, toasted
2 free range eggs
1 tbsp olive oil
½ tsp turmeric
½ tsp cumin, ground
¼ cup coconut milk
1 bunch spring onions, chopped finely
½ bunch chives, chopped finely
1 bunch coriander, chopped finely
1 avocado, mashed
Salt and pepper, to taste


Heat olive oil in a frying pan over medium heat, add spring onions, cook for 1-2 minutes, add turmeric and cumin, stir well, add eggs and stir-fry until lightly cooked, pour in coconut milk and warm through. Finally stir through coriander and chives.

Take off the heat and serve on a toasted bagel with mashed avocado and extra coriander.
