Ingredients
10 slices bacon
1kg fillet salmon, cut into 10 100g pieces
2 tbsp. olive oil
salt and freshly ground black pepper, to taste
2 tbsp thyme, chopped
¼ cup parsley, chopped
zest of 1 lemon
Method
In a bowl put the oil, thyme, parsley, salt, pepper and zest and mix together.
Skewer fish and wrap bacon around it.
