1 potato, grated
½ red onion, finely diced
1 long red chilli, finely diced
350g rindless shortcut bacon, cut into strips
1 carrot, peeled and grated
1 zucchini, grated
1 bunch parsley, finely chopped
1 bunch chives, finely chopped
2 tsp dried oregano
Salt & pepper
2-3 tbsp self-raising flour
Add all of the ingredients to a bowl, adding the flour a tablespoon at a time- the amount of flour you need will depend on how much liquid comes out of the vegetables. Stir everything together making sure there are no lumps of flour.
Spoon the batter into fritters and cook in a hot frying pan over medium-high heat, fry on both sides until cooked through and golden brown on both sides.
