Babi Guling (Balinese Roast Pork)

Ingredients

 

1.5 kg  pork belly skin on

Spice paste
1 tbsp salt
5 kaffir lime leaves, shredded
1 knob turmeric, freshly grated
2 birds eye chillies, finely chopped
2 golden shallots, coarsely chopped
4 garlic cloves, coarsely chopped
1 stem lemongrass, white part only, finely chopped
1 knob ginger, coarsely chopped
½ cup fresh coriander, coarsely chopped
1 tbsp coriander seeds, finely crushed
½ cup olive oil
1 tbsp black pepper corns, finely crushed
1 knob galangal, coarsely chopped

Fried rice
? red capsicum, diced finely
red onion
garlic
chinese sausage
ginger
curry leaves
coriander
snow peas
ketsip manis
salt and pepper
cooked rice
egg
deep fried shallots

Method

 

Process all ingredients for spice paste in a food processor with sea salt & blend until a fine paste

On work surface place pork skin side up and score the pork.

Spread over spice paste.

Leave to marinate.

Oven with lid on at 180C for 2 hours, take lid off and cook for a further 30 minutes.
