AYAM’s Pork & Mushroom Nyonya Curry with Fried Tofu



200 gms pork mince

1 tbsp. nyonya curry paste

½ red onion, sliced

5 cloves garlic, chopped

1 knob ginger, sliced

½ capsicum, diced

½ long red chilli, sliced

1 ½ assorted mushrooms, chopped

1 block silkin tofu, fried

2 tbps. oil

¼ cup stock

½ bunch coriander, chopped



Heat oil in heavy based frying pan.

Add ginger, garlic and red onion. Fry for one minute.

Add capsicum, red chilli and mushrooms.

Season well.

Stir through curry paste and mince.

Simmer for 2 minutes until mince is nicely browned.

Add stock and coriander. Stir.

Serve in a large dish on top of tofu.
