Avocado and Prawn Rice Paper Spring Rolls


½ cup hoisin sauce
1 tbsp ginger, grated
¼ cup peanuts, toasted, chopped
½ cup soya sauce
2 tbsp rice wine vinegar
1 long red chilli, chopped finely
Juice of 2 limes
1 clove garlic, grated
2 tbsp coriander, chopped

1 packet rice paper
½ bunch spring onion, chopped
½ bunch mint
½ bunch coriander
1 oak leaf lettuce
2 x avocado, sliced
200g cooked prawn cutlets, deveined and sliced in half through the middle
1 cucumber, deseeded and chopped into strips
Deep fried shallots
Toasted seaweed, chopped finely


Make sauce in a separate bowl, combining all of the ingredients.

Soak a rice paper in water and once it has softened, swiftly place the ingredients into the middle of the rice paper and roll it tightly. And repeat the process.

Dip roll in sauce and enjoy.
