Avocado Brownies

300g dark chocolate
2 tbsp coconut oil
3 hass avocados, pitted and peeled
½ cup coconut sugar
½ cup coconut flour
½ cup almond meal
½ cup cacao
¼ cup maple syrup
¼ cup rum
2 tbsp honey
1 tsp vanilla extract
3 eggs, at room temperature
For the frosting:
125g cream cheese
¼ avocado
1 tbsp honey
¼ cup coconut sugar
1 tbsp maple syrup


Preheat the oven to 160°C. Line a baking dish with baking paper.

Over a double boiler, melt the chocolate with the coconut oil until smooth and glossy.

Place the avocados, coconut sugar, coconut flour, almond meal, cacao, maple syrup, rum, honey, eggs and melted chocolate into the bowl of a food processor and blend until combined.

Pour the mixture into the prepared baking dish and place in the oven for 35-45 minutes until crispy on top.

Whisk all of the frosting ingredients together until combined. Allow the brownie to cool before spreading the frosting on top and cutting into squares.
