Arame Soba

Serves 4
Time 15 minutes


½ cup arame, soaked and drained
1 nori sheet, to sprinkle
400g soba noodles
100g tofu, chopped in cubes
1 cup edamame, cooked drained
1 bunch coriander
3 spring onions


1 tbsp. tamari
½  flat tbsp. miso paste
1 tbsp. toasted sesame oil
1 tbsp sesame seeds
2 tbsp. rice vinegar
1 tbsp. honey
½ tbsp. fresh ginger, grated


Rehydrate arame by covering with water and soaking for 10 minutes prior to using, then drain and let dry. Boil soba noodles until tender, rinse with cold water and set aside.  

Cook edamame beans for about 5 min. Drain and reserve.

In a bowl, mix all the ingredients for the sauce.  

In a large pot add noodles, arame, edamame and tofu covering with the sauce and sprinkle nori on top.
