4 green apples, peeled, cored, cut into pieces
½ cup brown sugar
½ tsp cinnamon
¼ cup currents
¼ cup raisins
1 cup almond meal
8 sheets thick fillo pastry
In a hot pan, melt the butter.
Add sugar, orange zest and cinnamon to cook in the pan. Add apple pieces and cook over a medium heat for 10 minutes or until apple is just tender.
Add almond meal to the apple mixture just before you take the pan off the heat. Set aside and allow to cool.
Place 4 sheets of fillo on a clean bench and brush some melted butter on it, connecting them together to make a larger sheet of fillo. Repeat this with another 4 sheets of fillo to make a double layer, for thickness.
Put the mixture in a line on the fillo, then carefully roll up and brush with some more butter.
Place the roll in the oven at 200C for 12-15 mins until golden brown.
Serve with ice-cream.
