Apple Fritters, Butterscotch Sauce


1 cup plain flour
2 tbls sugar
¼ cup currants
1½ tsp baking powder
pinch ground cinnamon
½ tsp salt
1 large egg
½ cup plus 1 tbls whole milk
3 large Fuji, Gala or Golden Delicious apples
Rice Bran Oil for deep frying
icing sugar for dusting (with a little cinnamon in it)

Butterscotch sauce
1 cup sugar
1/2 cup water
1/2 cup cream


Whisk together the flour and an egg and slowly pour in the milk. Sprinkle in the cinnamon, sugar and currants. The batter should be thick enough to coat your finger.

Slice the apples into rounds and pick out the core from each piece. Dip them in the batter and deep fry in a pot with rice bran oil.

Butterscotch Sauce
Pour the sugar and water in a small pot on high heat to caramelise the sugar. Once it’s caramelised, slowly add the cream and stir occasionally. Take the sauce off the heat once it thickens.
