Anzac Biscuits



1 cup flour – plain, sifted
2/3 cup sugar – sifted
1 cup rolled oats
1 cup desiccated coconut
125 gm butter
0.25 cup golden syrup
½  teas bicarb soda – sifted
1 tbs water – boiling



In a large mixing bowl,  combine flour, sugar, oats, and coconut. Set aside.

Heat butter and golden syrup in a pan over a low heat and stir until smooth.

Dissolve bicarb soda in boiling water. Immediately add to butter mix.

Make a well in the middle of the dry ingredients and pour butter mixture in. Mix until a dough forms.
Form balls with roughly 1 tablespoon of dough. Arrange on a greased baking tray.
Bake in a preheated 165C for 12 – 20 minutes or until golden.
Let cool for 5 minutes and serve.
