American Pumpkin Pie

½ x 275g packet Kataifi pastry
¼ cup melted butter
½ cup brown sugar
Icing sugar, for dusting

170g mashed pumpkin
3 eggs, beaten
2 tbsp bourbon whiskey
1 pinch cinnamon
1 tsp ginger, grated
¼ cup maple syrup
¼ cup brown sugar
100ml cream


Preheat the oven to 185C.

In a large bowl, add all the filling ingredients, aside from the cream and eggs, and combine well. Fold through the cream and eggs. Transfer to a baking dish and cook for 1 hour – 1 hour 15 minutes.

Separate the Kataifi and roughly chop. Mix with the melted butter, brown sugar and thoroughly work through. Spread over baking tray and cook in the oven for 25 minutes.

Stack the pastry over the pie and dust with icing sugar.
