Amaranth Apple Bread


¼ cup mixed raw and unsalted nuts
1¾ cup Amaranth flour, sifted
½ cup Arrowroot
2 tsp. Baking soda
1½ cup Apple; grated
1 cup Olive oil
2 tbsp Agave nectar
2 eggs
1 tbsp. lemon juice
1 tsp. Vanilla essence


Pre-heat the oven to 180C.
Process the ¼ cup nuts in a blender until coarsely ground.
Add the flour, arrowroot, baking soda, apple, oil, agave, eggs, lemon juice and vanilla. Mix until well combined.
Pour into a greased 9×5″ loaf pan or 2 7×3″ pans and bake for 45 minutes.
Let it cool and serve.
