1 onion, finely chopped
1 clove garlic, finely chopped
6 rashers bacon, diced
200g plain flour
500g tasty cheese, shredded
200g parmesan, shredded
Preheat the oven at 180°C.
In a pot with boiling salted water, cook the macaroni as per the packet directions. Drain and allow to cool. Place into a large baking dish.
Make a béchamel sauce by melting the butter in a medium-large pot and stir in the onion, garlic and bacon until the onion is softened.
Mix in the flour to make a roux. Gradually pour in the milk and stir until the milk incorporates, and then add and repeat until all the milk in incorporated. Stir in the parmesan and half of the tasty cheese until melted.
Pour the béchamel sauce evenly over the pasta and stir to ensure all of the pasta is well coated in the sauce. Sprinkle with the remaining tasty cheese sprinkled on top.
Bake at 180°C for 35 minutes or until golden brown.
