Oven Baked Loaded Fries

4 potatoes, unpeeled, cut into chips
Extra virgin olive oil
Salt and pepper, to taste
2 red onions, thinly sliced
200g bacon, cut into lardons
2 spring onions, roughly chopped
1 jalapeño, diced
2 cup mozzarella, grated


2 avocados
4 spring onions, finely chopped
1 jalapeño, diced
1 tsp smoked paprika
1 tsp cayenne pepper
Juice of 1 lime
½ bunch chives, finely chopped


Sour cream, to serve


Preheat the oven to 180°C.


Place the potato chips on a baking tray, drizzle with olive oil, season with salt and pepper, and place in the oven. Bake for about 35 minutes or until golden and crisp.


To make a guacamole, in a small bowl, mash together the avocado, lime juice, paprika, cayenne, jalapeño, spring onion and salt and pepper until combined.


Heat a large frypan over high heat. Add the bacon and allow the fat to render slightly, then add the onion and a drizzle of extra virgin olive oil. Cook for about 5 minutes or until the onions are slightly caramelised.


Once the chips are cooked, transfer half of them to an ovenproof dish and top with half of the onion and bacon mixture, followed by half the spring onion, jalapeño, and mozzarella. Repeat the layering process with the remaining ingredients and place back in the oven for 10-15 minutes until the cheese has melted.


Serve with the guacamole and some sour cream.
