Millet Cakes


Ingredients

½ brown onion, diced

1 clove garlic, chopped

2 tsp turmeric

2 tsp garam masala

1 cup millet, cooked

1 carrot, grated

1 zucchini, grated and squeezed dry

Tamari to taste

½ -1 tbsp coconut oil

 

2 tbsp sesame seeds

2 tbsp sunflower seeds

1 tbsp tamari


Salad

½ cucumber, cut into half moon

¼ red onion, sliced

2 cups baby spinach

1 tsp lemon juice


Method

Sauté the onion in the coconut oil then add the garlic and spices. Cook until the spices start to stick. Add the millet to the pan and tamari to taste.

In a separate pan, dry roast the seeds until golden and start to pop. Pout over tamari and stir.

Using your hands, roll millet mix into balls. In a large pan, melt ½ tbsp of coconut oil, and fry the balls until they are golden brown on each side. (Or bake.) Drain on absorbent paper, and then serve with a green salad sprinkled with toasted tamari seeds.

  • bad recipe - no mention of adding zucchini and carrot and what keeps the mixture together - there was nothing I could do to stop it falling apart - even rolling in flour didnt help - I would have added egg but thought this was a vegan dish 0 can someone clarify this recipe furhter?? stella quinert
  • Hi Janella, I made these this evening for dinner...and what a disaster! Is there an ingredient missing? Because upon attempting to 'roll' the millet mixture into balls, upon placing them into the pan they just crumbled to pieces. I ended up cooking the entire mixture almost stir fried in the pan and added baby spinach to create a salad like dish. Also, your method does not specify when to add the carrot & zucchini to the cooking process. Can you please review this recipe, because I'd like to make them just as you'd prepared them on the show.. All in all the flavors were nice. Thank you :) Amanda
  • This is a second fiasco. Cannot figure out why the mixture would not roll into balls. End up stuffing a butternut with mixture. Great taste but will have another attempt at this recipe later. Mireille
  • On the show janella dd not add the millet to the pan. She added the zucchini (you must squeeze the moisture out) and carrot and cooked them down. Then she combined everything together in a bowl before making balls. I think she also cooled the mixture in the fridge? I added an egg as I didn't have time for that. I've made this twice. Once with squeezed zucchini and once without and when I didn't squeeze the zucchini they fell apart. I have no idea why. Anne Wigglesworth
  • I watched her make these today the grated carrot and zucchini were very quickly fried in a little coconut oil with the spices, onion and garlic . Both the millet and veges mixture were then mixed together . When cooled they were rolled and fried in a little coconut oil . lea
