Marinated Tofu, Feta and Cherry Tomato Skewers


Ingredients

100 gram of hard tofu, cubed
100 grms soy feta, cubed
1 tsp of olive oil
1 tsp of dried oregano
1 tsp of dried thyme
50 gram of cherry tomatoes
2 limes, juiced
salt & pepper

In a mixing bowl add the olive oil, oregano, thyme, lime juice and a pinch salt and pepper. Mix together. Place the tofu and fetta into the herb mixture and toss until all side are coated.
With a sharp knife chopped the skewers in half. Then place a cube of tofu, a cube of fetta and then a cherry tomato and repeat once.
Place the skewers on a medium heated BBQ and cook for 2-3 minutes each side.
