Baked Eggs with Avocado, Corn and Feta


Ingredients

4 whole eggs
½ an avocado, skin and pip removed, cubed
1 fresh corn cob, cooked
2-3 tbsp of feta cheese, crumbled
Salt and pepper to taste
1 slice of multigrain bread to serve

Preheat the over to 180C.
In a bowl crack the eggs, salt and pepper and whisk until light and fluffy. Add the feta, corn and avocado.
Pour the mixture into the ramekin.
Place in the oven for 5-10 minutes, or until golden brown.
Drizzle with olive oil and serve with some multigrain toast on the side.

  • I am surprised this is a one person serve. 4 eggs, one ramekin and one slice of multi grain. I didn't realise 4 eggs was permitted in a daily intake. In this respect, I would love to see more information from Zoe with regards to portion sizes, food allowances etc. She has stated that only two serves of fruit a day a generally the limit - who in the wider public would've known that? Great pointers, tips and information sessions like this would be welcomed! Bridgette
  • I agree with Bridgette - I was wondering why one ramekin for one person would have 4 eggs and the other quantities of ingredients - an error or oversight, methinks! Surely this recipe is for 4 people and 4 ramekins... Eve
  • There is a mistake on this recipe, on the televised version, Zoe pours them into 4 regular ramekins, so its actually 4 servings. They've made a mistake in the method, saying to pour into 'the' ramekin. Danielle

Its like righting a letter to the Queen, She doesnt read & answer them, her team of worker ants do. Obviously there will be some mistakes. Jo
