Guilt Free Mashed Potatoes


Ingredients

2-3 large potatoes, scrubbed and cut into 1-inch chunks
1½ cups of cauliflower florets
2 tablespoons olive oil
½ an avocado
1 tsp of cumin
Salt and pepper to taste
Parsley for serving
A little hot water if needed to make it moister

In a large saucepan place the chunks of potato into water and bring to the boil. When the water in boiling add the cauliflower and cook for 20 minutes or until soft.
Add all the remaining ingredients into a food processor and blend until soft and fluffy.
Serve the mash with a little olive oil, sea salt and parsley drizzled on top.
