Coconut and Blueberry Mousse Cake


Ingredients

3 tbls agar agar granules

1½ - 2 cups Blueberries

1 tbls Panela (sugar) or coconut palm sugar

2x 400g can coconut milk

½ cup agave, maple syrup or raw honey

1 cup lecithin granules

Juice and zest of one lime

Place the blueberries, 2 tablespoons of the agar agar and sugar in a pan over a low heat and let simmer for a few minutes, until agar is dissolved. Blitz for 30 seconds to dissolve the blueberries a little. Line a spring form tin with cling wrap and pour mixture in. Put it in the fridge to set.  This will take about 20 minutes.

In a clean pan place 100g coconut milk and the last tablespoon of the agar. Let simmer for a few minutes until the agar is dissolved. Allow to cool slightly, then place in a blender with the rest of the ingredients. Blend until smooth and then pour on top of the set coulis. Refrigerate overnight or at least a few hours.

  • Hi there, does anyone know what substitute I could use for lecithin granules?? I searched it on Google but the results weren't very specific although one website told me I could use egg yolk? Is that true? Does anyone know? Your help would be much appreciated :)) Michelle
  • Where can I buy agar agar granules? I have tried woolies, coles, I tried a health food shop and all they say they ever have is Agar powder. Can I use the powder instead and how much? Wendy I would say that you only choose the one. Michael

  • Hi all, Agar Agar can be bought from an asian grocery (try an Indonesian grocery if you know of one). It's just like gelatine, but is vegetarian. @Michael, i would say the powder is the same as granules as the granules are very fine anyway. :) Angela
  • Thanks Angela, any idea on the amount of powder v granules? Michelle,Zineb, Nicole, I found the lecithin granules in Coles. there is a reciepe from an earlier show the Saffron poached pears, cooked this twice already and worked a treat. I ddi use firm pears for this. michael

  • I bought powdered agar agar in the health store. I just wonder that 3 tbl. spoon is too much for the recipe. On the package it is said that you need only 1 tea sp. per 2 cups of liquid. elena
  • I just made this and was pretty disappointed, because I followed all instructions and ingredients to a tea and it didn't set. I will however make it again and next time use 1tbs agar agar in the blueberry mixture, so its not so hard and tastless and 2 tbs agar agar in the coconut mixture so it sets properly.   • Agar is quite 'potent'. If you are using powder instead of granules/flakes - I would suggest halving the amount :) It can be found in any Asian grocery store. Asha
