Grandos Nachos


300g beef rump diced

1 tbsp cumin toasted and ground

1 tbsp smoked paprika

1 tsbp cayenne pepper

1 tbsp dried chilli

1 tspn salt

1 kg corn chips

400 gms fresh ripe tomatoes

6 jalapeno peppers, sliced (pickled)

1 bunch coriander

1 bunch spring onions, roughly chopped

1 red onion, sliced

500 gms monteray jack cheese

250 gms cheese whizz, (yellow cheese sauce)

4 avocados

In a hot pan with some olive oil, add the beef, cumin, cayenne pepper, chilli and salt and let the meat brown.

Grate the cheese in the cheese whizz and stir it through.

In a deep oven tray, layer the corn chips, onion, tomato, cheese and beef and sprinkle the jalapeno peppers and spring onioons throughout.

Put it in the oven for approx. 15 minutes until the chips are golden brown

  • Wondered if possible to give esimate number of servings with these recipes. I use both Adrian and Nagella's recipes as cook for a Vegi son, but his wife and 3 daughters are 'carnivals' so this recipe especially great as can use the vegi casserole mix for the vegetarian and rump for the rest of us.
