  • Dashi is a stock powder made from mushrooms. I live in Newcastle and found it very hard to get. Even the asian grocers did not have it. I finally found it at a small organics store in Merewether (Hunter organics). It came in pkts of 10 sachets and cost $12. It is a totally natural product but if you cant find it I'm sure an "asian" or veggie flavoured stock cube would do or leave it out all together as the taste of the miso is quite strong anyway. Also next time I will 1/2 or even 1/4 the amount of coriander as it was a bit overpowering. My son is not a coriander fan and couldn't finish his serving. Debbie
