Parfait Chocolate
Ingredients
6 yolks
12 eggs
650g sugar
1500 ml cream, soft peaks
400g chocolate
1½ shots of black coffee
Method
Mix the yolks, eggs and sugar in a bowl. Allow cooling. Add cream and fold through the mixture.
Divide mixture in half. Flavour half mixture with melted chocolate. Flavour second half with black coffee shots.
