Whole Baked Grapefruit Crumble

Ingredients

2 grapefruits, cut in half
½ cup oats
½ cup walnuts, chopped
⅓ cup hemp seeds
1 tbsp coconut sugar
1 tsp cinnamon
1½ tbsp almond butter
1½ tbsp coconut oil
Pinch salt

 

To Serve
Greek yoghurt
Drizzle of hemp seed oil

Method

Preheat oven to 200°C.

Thinly cut the base off the grapefruit halves so that they can sit flat. Place the grapefruit halves into an ovenproof dish, and score the grapefruit flesh with a knife to loosen.

In a small bowl mix together the oats, walnuts, hemp seeds, coconut sugar, cinnamon, almond butter, coconut oil and a pinch of salt. Rub the mixture with your fingers until crumbly and combined.

Spread the crumble mix on top of the grapefruit and bake for 10-15 minutes.

Serve warm with a dollop of Greek yoghurt and a drizzle of hemp seed oil over the top.
