Walnut Mince Tacos

Ingredients

Walnut Mince
1 cup walnuts
½ cup sundried tomatoes
1 tbsp soy sauce or tamari
1 clove garlic
½ tsp smoked paprika
½ tsp chilli powder
½ tsp cumin
Salt and pepper


To serve

4 soft corn tortillas
1 cup Greek yoghurt
1 tsp chipotle
1 avocado, slices
¼ tin corn, drained
¼ lettuce, shredded
1 tbsp coriander, chopped
1 lime, cut into wedges

Method

Place walnuts in a bowl of room temperature and leave to soak for 20 minutes.

Drain and add the soaked walnuts to a food processor, along with the sundried tomatoes, soy sauce, garlic, smoked paprika, chilli powder, cumin, salt and pepper. Pulse a few times to just combine, ensuring to not over process and turn into a paste.

Mix yoghurt and chipotle in a small serving bowl.

Heat corn tortillas, then fill with the walnut mince. Top with avocado slices, corn, lettuce, fresh coriander and a squeeze of lime.
