Vegetarian Big Breakfast Fries

Serves 2-4
Time 1 hour 20 minutes

Ingredients

2 sweet potatoes, skin on
½ tsp paprika
Salt and pepper, to taste
2 vegetarian sausages
½ cup cheddar cheese, grated
2 eggs
1 bunch chives, finely chopped

Method

Preheat oven to 180°C.

Slice sweet potato into thin fries shape, lay on a baking tray and season with paprika, salt and pepper. Bake for 1 hour or until golden.

In a medium non-stick pan cook sausage until browned all over. Slice and add to the fries, then sprinkle the grated cheese over the top. Return the tray to the oven and cook for a few more minutes until the cheese has melted.

Crack eggs into a pan and cook until the whites are set (or to your liking).

Place eggs over the cheesy sausage fries and transfer to a serving dish.

Garnish with chives.
