Turmeric and Ginger Dahl Soup

Serves 2
Time 45 minutes

Ingredients

1 tbsp olive oil
1 brown onion, diced
1 cup red lentils
2 garlic cloves, grated
2 ½ cups vegetable stock
1 tsp fresh ginger, grated
1 tsp fresh turmeric, grated
½ tsp paprika or cayenne pepper
Salt and pepper, to taste
Greek yoghurt, to serve

Method

In a pot heat extra virgin olive oil and saute onion for 2-3 minutes or until translucent.

Add red lentils, stir for a 1 minute.

Add in the rest of the ingredients, covering and cooking for 25-30 minutes until the lentils are cooked through.

Serve with sprinkle of extra paprika, pita bread and Greek yoghurt.
