Super Tom Healthy Salad & Baguette

Ingredients

1 x Large Baguette
1 x Punnet Super Tom Tomatoes
1 x Roasted Red Pepper (marinated with vinegar, mustard seed and olive oil)
1 x Cup Bocconcini Cheese
1 x Avocado
1 x  Bunch Parsley
1 x Bunch Dill
1 x Bunch Sliced Spring Onion
Black Pepper
Salt
Extra Virgin Olive Oil

Method

Slice Super Tom Tomatoes down the middle and place in a bowl. Add roasted red pepper and bocconcini and splash with virgin olive oil before seasoning with salt and pepper. Scoop out avocado, chop roughly and season with salt and pepper and tomato mixture. Roughly chop dill and parsley, then add to the bowl along with sliced spring onion.

Cut baguette longways just left of the centre. Pour the filling into the baguette and top with olive oil and extra salt and pepper.
