Ingredients

2 tbsp extra virgin olive oil
1 tsp ground coriander
1 tsp black mustard seeds
1 tsp cumin seeds
1 tsp garlic, grated
1 tsp fresh ginger, grated
2 tsp curry powder
1 large potato, diced
1 carrot, diced
1 tsp turmeric powder (optional)
100g cauliflower, chopped
100g green beans, chopped
2 tomatoes, diced
400ml vegetable stock
Salt and pepper
1 tbsp fresh coriander, chopped

Serve with
Roti
Steamed basmati rice
Raita
Beetroot relish

Method

Heat olive oil in a large pan. Add ground coriander, mustard seeds and cumin seeds, and once they begin to pop add the ginger, garlic and curry powder and lightly fry on a low heat for 30 seconds.

Stir in potatoes, carrots, cauliflower, green beans and tomato then pour over the vegetable stock. Season with salt and pepper then cover with a lid and cook on low heat for 15 minutes until the vegetables are soft.

Mix through finely chopped coriander then remove from the heat.

Serve with raita, relish, steamed basmati rice and roti.
