Roast Pork Calypso

Ingredients

2.5kg lean pork loin

olive oil

salt & pepper

½ cup chicken stock

 

marinade

1 bunch coriander

1 tbsp. powdered ginger

1 tsp. ground clove

½ cup brown sugar

1 tbsp. curry powder

2 cloves garlic

1 large knob ginger

½ cup rum

juice of 1 lime


Method

Preheat oven to 175°C.

Lightly scored the pork, season with salt & pepper and drizzle with a generous amount of oil.

Place the pork scored side up in a shallow roasting dish. Roast the loin for 1 hour, until golden brown.

For the marinade, place all ingredients in to a processor and mix until well combine.

Spread the paste evenly over the scored pork fat.

Return to the oven, skin side up, pour stock into the bottom of the pan and roast for another30 mins.

Rest for 10 mins.
