Raw Sweet Potato and Kale Salad

Serves 4
Time 15 minutes

Ingredients

2 cups sweet potato, grated
1 cup raw kale, finely chopped
1 lebanese cucumber, finely diced
1 bunch coriander, washed and finely chopped
1 cup dried currants
1 cup walnuts, chopped

Dressing
4 tbsp olive oil
6 tsp curry powder
2 tsp fresh ginger, finely grated
2 tbsp apple cider vinegar
2 tbsp tamari

Method

Place the sweet potato in a bowl with the, kale, cucumber, coriander, currants and walnuts.

In another bowl, combine the dressing ingredients and whisk together.
Pour the dressing over the salad, toss well and serve.
