Prawn Burger

Serves 4-6

Ingredients

1 small red onion, diced
1 garlic clove, grated
1 tbsp ginger, grated
1 tbsp extra virgin olive oil
1 long red chilli, deseeded, chopped
3 spring onions, chopped
1 ½ cups butter beans
450g small raw prawns, shelled and deveined
½ cup chopped coriander
1 tsp mild chilli powder or cayenne pepper
1 tsp salt and pepper

Olive oil, for frying

Sauce
¼ cup American mustard
¼ cup BBQ sauce
¼ cup tomato sauce
3 drops Worcestershire sauce
1½ cups mayonnaise

Brioche buns, toasted
Lettuce, Tomato, Lime, to serve

Method

Blend the prawns in a food processor with the red onion, garlic, ginger, chilli, spring onions, cayenne pepper, olive oil, salt, coriander and beans.

Pour the olive oil into a pan on a medium to low to heat, then divide the mixture into spoonfuls and cook them on each side until golden and crisp, about 4-5 minutes. Drain on kitchen paper and repeat until they are all finished.

Mix the sauce ingredients together.

To make the burger, place lettuce and tomato on the burger base, top with the patty and sauce, and finish with a squeeze of lime over it and the burger lid.
