⅓ cup smooth peanut butter
1 ½ cups plain flour
1 tsp baking powder
½ cup coconut sugar (+ extra for rolling)
1 tsp vanilla paste
1 pinch salt
¼ cup water, if needed
Preheat oven to 180°C. Line a baking tray with baking paper.
Add all ingredients to a food processor and mix, scraping down the sides as needed. Add the water gradually if the mix is too crumbly.
Roll a tablespoon of dough between palms to form a ball, then roll in the coconut sugar.
Place on the lined baking tray and use a fork to flatten.
Bake the cookies for 10-12 minutes until just starting to turn golden.
