2 large bananas
½ cup smooth peanut butter
1 cup dark chocolate
2 tbsp coconut oil, melted
Line a medium baking tray with baking paper. Slice bananas into 2cm-thick slices and place half on the tray.
Smear peanut butter onto each banana slice and place another slice of banana on top. Place in the freezer for half an hour to set.
In a microwave safe bowl melt the chocolate with the coconut oil, using a fork to make smooth.
Place each banana bite in the melted chocolate to completely coat. Return to the paper-lined tray and repeat process with all the banana bites.
Place in the fridge for at least two hours or until firm and set.
*Will keep for a week in the fridge.
