Olive Oil, Honey & Apple Cake

Ingredients

4 green apples, peeled, cored and thinly diced
1 cup self raising flour, sifted
½ cup brown sugar
1 tsp baking powder

¼ cup extra virgin olive oil
4 large eggs
½ cup honey, warm

Method

Preheat oven to 175ºC.

Mix flour, sugar, baking powder, oil, and eggs in bowl and whisk until smooth.

Fold in apples.

Pour mixture into a lined or greased baking dish, and bake at 175°C for 1 hour, taking it out at around 40 minutes and pour over the warm honey to create a glaze. Bake in the oven for another 20 minutes until golden brown and skewer comes out clean when poked in the centre.

Serve warm or cold.
