Natvia’s Orange and Almond Cake

Ingredients

500g almond meal

5 oranges (more if they are really small and you can use 8 mandarins if you like – just as yummy)

1/2 cup cacao nibs

1/2 cacao powder

6 eggs

Heavy-handed dash of cinnamon

1-2tsp vanilla – extract or fresh from the pod

4 tsp of Natvia

1 tsp gluten-free baking powder

2 tbls coconut oil

 

Method

Boil the oranges up and them simmer for 45 minutes to an hour on low

Let the oranges cool and then drain

Cut up oranges and whizz in blender/food processer

In a mixing bowl add in oranges and eggs – stir well

Next add in cacao, almond meal, baking powder and seasonings – fold through really well

Finally, fold through 1tbls melted coconut oil

Grease a baking tin or even muffin tray with the rest of the coconut oil

Cook on 180 for an hour and twenty minutes – check if they are getting to crisp/brown and cover with foil. Ready when your skewer comes up nice and clean.
