Melon Granitas

Serves 4-6
Time 15 minutes (+freezing time)

Ingredients

Cantaloupe Sorbet
700g cantaloupe, chopped
½ tsp stevia
Juice of 1 lime
½ cup water

Watermelon Sorbet
700g watermelon, chopped
½ tsp stevia
Juice of 1 lime
½ cup water

Honeydew Sorbet
700g honeydew, chopped
½ tsp stevia
Juice of 1 lime
½ cup water

Mint leaves, to garnish

Method

Place the cantaloupe in a blender or food processor with the stevia, lime juice and water and blend until smooth. Repeat the process with the other melons.

Pour the mixtures into three individual containers, cover with a lid, and place in the freezer for a minimum 2 hours or ideally overnight.

Remove the frozen containers from the freezer and allow to soften for about 5 minutes. Scrape the frozen melon mixture with a spoon or fork to create a granita-like texture. Layer spoonfuls of the different flavours in a serving glass or spoon and top with fresh mint leaves.
