Leek and Potato Soup

Ingredients

6 cloves garlic
1 large onion finely diced
1 leek, sliced
2 celery sticks, sliced
75g butter
1 tab picked thyme
2 potatoes, peeled and roughly chopped
1L of chicken stock
2 tbsp. extra virgin olive oil

Method

Using a Magimix Cook Expert, set the temperature to 130C, speed to 3 and time to 5 minutes. Add butter, garlic, onion, thyme and sweat off.

Set the temperature to 130C, speed to 3 and time to 5 minutes. Add the leek and celery and sweat off.

Set the temperature to 130C, speed to 3 and time to 5 minutes. Add the stock and potatoes and continue cooking.

Set the temperature to 130C, speed to 10 and time to 25 seconds. Puree the soup and serve.
