½ pkt 100% buckwheat noodles
½ cup raw honey
2 tbls tamari
1 tbls ginger, grated
1 tsp mirin
1 cup filtered water
2 salmon fillets
1 tsp olive oil
1 tsp kudzu mixed with ½ cup filtered water
2 spring onions, sliced on the diagonal
Cook your noodles. Drain, rinse then set aside.
In a bowl mix together the honey, tamari, ginger, mirin and water. Place the fish in a shallow bowl and pour the marinade over. Let it marinate for as long as you can, and flip it a couple of times so all of the fish is marinated.
Steam in a bamboo steamer, or in a pan on lemon slices with about ½ cup water. This should take about 3 minutes. Pour the marinade in a pan and allow it to gently heat, then slowly pour in the kudzu slurry. This will thicken it so stir it to prevent lumps.
To serve, divide the noodles between two shallow bowls, then top with the fish. To finish, pour the marinade over the fish. Sprinkle with the spring onions.
