Grilled Tofu with Angel Hair Noodle Salad

Ingredients

Number of people this recipe serves:  4

Ingredients:

1pkt San Remo Artisan Angel Hair pasta

500g Firm tofu, cut into 2cm cube

olive oil

Salad ingredients:

½ cup mint leaves

1cup coriander leaves

1cup thai basil leaves

1cup snow peas, finely sliced

150g enokii mushrooms, roots removed

1 cup beans sprouts

Garnish:

½ cup roasted peanuts

3 tbsp fried shallots

4 bamboo skewers, soaked in water

Salad dressing:

1 clove garlic, chopped finely

1 sml chilli, chopped finely

5 tbsp lime, juiced

5 tbsp fish sauce

4 tbsp palm sugar

1 tsp. sesame oil

Method:

  1. Cook pasta as per packet directions. Refresh pasta under cold running water. Strain and toss a little veg oil through the pasta. Set aside.

  2. Place equal amounts of tofu over the skewers.

  3. Heat a griddle pan on medium and cook the skewers for 1 to 2mins on each side or until golden brown.

  4. To construct salad, in a large bowl place noodles, salad ingredients and ¾ of the dressing.

  5. Toss gently to combine. On a serving platter, place the salad and scatter peanuts and fried on top.

  6. To finish place skewers on top and finish off with remaining dressing.
