Gazpacho

Serves 4
Time 10 minutes

Ingredients

500ml tomato juice
1 small chilli

½  tsp. celery salt

Freshly ground black pepper to taste

½ green pepper, finely diced

½ red pepper, finely diced

1 cucumber, roughly chopped
½ red onion, finely diced

3 ripe tomatoes, diced

¼ cup Extra virgin olive oil
4 pickled anchovies
¼ bunch coriander
¼ bunch parsley
¼ bunch mint
1 cup ice cubes

Method

Using a blender, blend together all ingredients, except the ice, until well combined. Add the ice and blend again.
