2 puff pastry sheets, thawed
1 egg, lightly beaten
3 green apples, peeled and thinly sliced
1 cup stewed apple/unsweetened apple puree
1 tsp ground cinnamon
Juice of ½ lemon
Preheat the oven to 200°C.
Prepare a baking tray with baking paper.
Lay a sheet of puff pastry the baking tray. Brush the rim with the egg and lay another sheet of puff pastry on top. Using a sharp knife, cut a square out of the centre of the top pastry layer, leaving a 3cm border. Prick the inner square all over with a fork to create steam holes.
Brush the pastry all over with egg wash and bake for 15 minutes.
Remove the pastry from the oven and allow to cool slightly. Take out the top layer of the inner square. Spread the stewed apple over the centre of the pastry. Layer with even rows of apple slices until completely covered.
Drizzle with lemon juice and sprinkle with cinnamon.
Turn the heat down to 170°C and bake or a further 10 minutes.
