1 large chicken, cut into pieces
2 garlic cloves, grated
¼ cup coriander
2 tbsp curry powder
Salt and pepper to taste
2 tbsp extra virgin olive oil
Lemon wedges to serve
Combine the garlic, coriander, curry powder and olive oil rub into the chicken pieces until coated well. Season with salt.
Cook the coated chicken in a hot pan with a little extra olive oil, turning occasionally, until cooked through.
Serve with lemon wedges and extra coriander.
