Coconut and Mango Puddings

Ingredients

400g can coconut milk

1 cup mango flesh

½ cup agave or raw honey or maple syrup

200g lecithin granules (non GMO)

Juice and zest of one lime

One mango, flesh pureed

One lime, zested

6 moulds, holding about 1 cup 

Method

Blend all the ingredients together until smooth, then pour into moulds. Put in the fridge to set until firm, about 4 hours. Serve with pureed mango and lime zest.
